Irish Soda Bread
3 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
2 tablespoons sugar
1 egg, beaten
1 cup buttermilk
2 tablespoons unsalted butter
1/2 cup raisins (or currants if you prefer)
Directions:
1. Preheat oven to 350 degrees F. Grease a medium cast iron skillet, or a cookie sheet or cake pan.
2. Mix flour, baking soda, salt and sugar. Add raisin and toss to coat. Make a hole in the middle of the flour mixture, and add beaten egg, buttermilk and melted butter. Mix wet into dry ingredients until just combined. Knead the dough with a few quick turns and shape into flat circle, handling the dough as little as possible. Place into pan.
3. Bake 40-45 minutes, or until edges are golden brown. Cool or serve warm with jam and butter.
